    • 3 to 4 thick slices of Jersey Girl Mild or Tangy Pork Roll
    • 1 fresh round Kaiser roll or hard roll
    • 2 large fresh eggs
    • 2 slices Yellow American cheese
    • 1 tbsp salted butter
    • Salt, freshly cracked black pepper, and ketchup (SPK) to taste

      Slice the Kaiser roll in half and butter both cut sides generously.

      Preheat a cast-iron skillet or flat-top griddle over medium-high heat (375°F).

      Make 3 or 4 small radial cuts along the edge of each pork roll slice to prevent cupping during cooking.

      Place pork roll slices on the griddle. Sear for 90 seconds until edges curl and crisp, then flip and cook for another 60 seconds.

      Toast the buttered roll cut-side down on a clear section of the griddle until golden brown.

      Crack eggs onto the griddle. Fry over-medium or fold into a thick square.

      Stack the seared pork roll slices together, lay the eggs on top, and drape two slices of Yellow American cheese over the hot stack to melt.
